  • 60 ml (2 Oz) of Bottled Water.
  • 60 ml (2 Oz) Heavy Cream.
  • 60 ml (2 Oz) Whole Fat Milk.
  • 1 Fresh Organic Madagascar Or French Vanilla Pod.

There should be no difficulties in sourcing any of these ingredients. A Madagascar vanilla pod produces a better flavor than a French vanilla pod. I’ve given you the option in case you have difficulties sourcing Madagascar vanilla pods.

About The Single Origin Peruvian Coffee

I’m not suggesting that you choose any random single origin coffee from Peru that you find.

Seek out beans from the Chanchamayo province as these are well respected for being the best beans from Peru due to the perfect climate and high elevations.

Chanchamayo are beans that are from a high altitude and are classified as such. Expect a chocolatey nutty flavor with a citrus-tones acidity.

The 100% Arabica beans from Volcanica from this Provence, which is a medium roast, is a great choice.

As I’ve stated earlier, the best quality coffee to make for this drink is an espresso shot using an espresso machine.

It is the only machine that can make an espresso. There are other brewing equipment that many claim to make espresso coffee, I’m talking about the Aeropress, the moka pot and single serve coffee makers like a Nespresso. At best, they make espresso like coffee but distinctly not espresso.

They lack the pressure required to produce the thick rich crema on top. A Nespresso uses a centrifuge to aerate the coffee, which produces a weaker creama.

Making Your Double Espresso Shot

To make the perfect double shot of strong, well brewed espresso, start by weighing 40 grams of whole coffee beans.

Grind them using a ceramic flat burr grinder and grind in 5 second bursts and rest for 3 seconds. It is the best grinder and the best grinding technique.

The perfect grind size is 200 microns, which is a powder like espresso grind.

Add your coffee grounds to your portafilter and prepare for tamping.

Tamp with an even pressure of approximately 30 kg (66 lbs).

Add clean fresh bottled water to your espresso machine. The better your water, the better your coffee will be.

Place your digital coffee scale on your drip tray, put your coffee cup on top and tare your scales.

Pull your shot. Time and weigh your extraction.

The perfect weight of your double shot is 60 grams (2 Oz). The sharp-eyed coffee lovers may notice a coffee to water ratio of 1:1.5, this is the original Italian ratio for brewing a strong and bold espresso, which is what this drink requires.

If your weight is out, you may need to adjust your machine or use manual intervention to stop or brew more.

The brewing time should be as close to 25 seconds as possible. There is a permitted variance of 5 seconds either side of the 25 seconds.

If your double shot takes 31 seconds or more to brew your coffee grinds are likely too small, which is inhibiting the flow of your hot water through the bed of coffee. To encourage greater flow, use a slightly larger grind size.

If your double shot is extracted in 19 seconds or quicker, you have the opposite problem. Your hot water is flowing past your bed of coffee too quickly and not getting enough contact with your coffee grounds, resulting in an under brewed coffee that is slightly sour tasting.

Add 2 Oz (60 ml) of heavy cream and 2 Oz (60 ml) of full ft milk together in a small saucepan and stir well to ensure that they are well mixed together to make the perfect half-and-half cream.

Slice an organic Madagascar vanilla pod and add it to your half-and-half cream. Gently heat your half-and-half cream with your sliced Madagascar vanilla pod at a low heat, keep stirring.

Let your dairy solution simmer for half an hour and ensure that is does not go over 55C (140F), ideally keeping your solution at a temperature of 50C (130F).

If your dairy goes above this temperature, the milk sugars start to burn, and you’ll get burnt notes.

Let your vanilla sweet cream cold foam cool naturally and then in your fridge for 6 to 12 hours. The time variance is due to how much of a vanilla flavor you want in your sweet cream.

When you have perfect flavor, remove the vanilla pod slices.

Putting It All Together

Pour your double espresso shot into a tall glass with ice and pour twice as much vanilla sweet cream cold foam into the drink; 4 Oz (120 ml) of the tasty topping is to be used.
