Ingredients Needed

You need only two ingredients: Espresso beans and white chocolate.

Coffee Beans

You can quite literally use any coffee beans that you want. I strongly advise that you use espresso beans as they are softer and have a more traditional coffee taste. Other roasts will be harder to bite.

For a gourmet quality treat, seek out top quality volcanic coffee beans from an espresso roast that are of the peaberry variety.

Peaberry coffee is a rare genetic mutation where there is only one bean inside the coffee cherry instead of two. This means that the one single coffee bean gets all the flavor and nutrients rather than sharing it with its twin.

Volcanica is a great brand that focuses on volcanic coffee from all over the world.

White Chocolate

Obviously, the better the quality of the chocolate used, the better your confection treat will be. If you are going to take my advice and use espresso roasted peaberry volcanic coffee beans you may as well use gourmet chocolate to match them rather than using an average bar of chocolate.

Callebaut Recipe No 2 is gourmet white chocolate from Belgium, and few make chocolate better than the Belgians.

Once you have mastered this recipe, you can experiment with any flavor chocolate that you want to, from chili flavored dark chocolate chips to mint chocolate chips, orange chocolate chips, and semi sweet chocolate chips and gourmet milk chocolate. It is truly up to you how you get creative and experimental with your culinary creativity.

Some variations I have experimented with include making peanut milk chocolate candy with specialty grade espresso beans.

Instructions

Put your white chocolate chips or broken bar of white chocolate into a microwave-safe bowl.

Microwave in short bursts of 10 seconds each to melt your chocolate and ensure that you don’t burn your chocolate. As it starts to melt, reduce the time to 7 seconds to be on the safe side.

Take your bowl from the microwave when your white chocolate has melted and add your espresso beans. Stir well until your beans are well mixed and coated in chocolate.

Here comes the difficult part, the part that requires patience. Use a teaspoon or fork, whichever you can use best to remove your espresso beans individually.

Remove them carefully and place them on a sheet of baking paper with a parchment paper on top and place all your espresso beans apart and not touching each other.

It’s a tedious and meticulous process.

The whole process should take no longer than 15 to 20 min. Let them cool down at room temperature or better still in your fridge.

Once they have set, store in an airtight container and store in your fridge.
